19 Dec Souffle omelette with spiced beef and spinach
Ingredients
1 tbsp Olive oil
1 Onion, thinly sliced
250g Reduced fat beef mince
1/2 tsp crushed Chillies
2 tsp Smoked paprika
1 tsp Mixed herbs
1 Garlic clove, sliced
90g Baby spinach
12 Eggs, separated
60g Feta, crumbled

Heat the olive oil in a large nonstick frying pan over a medium-high heat

Once hot, add the onion and cook for around 10 mins or until soft and golden, stirring occasionally

Add the beef mince and brown for 5 mins, breaking it up with a wooden spoon

Add the chilli, paprika, herbs and garlic

Stir well to combine and cook for a further 2 mins

Season to taste

Add the spinach to the pan and fold through the beef until wilted

Transfer to a bowl and cover to keep warm

Wipe the pan clean with kitchen towel, then return it to the hob set over a medium heat

Whisk the egg whites for 2 mins or until frothy

Whisk the yolks into the egg whites

Season

Pour quarter of the egg into the pan and let it settle on the bottom to cook for 3-4 mins, then add quarter of the spicy beef and Feta to half of the omelette

Fold the omelette over to encase the beef and cheese, then cook for a further 2-3 mins

Transfer to a plate (cover to keep warm while you cook the others) and repeat 3 times with the remaining ingredients
