Fresh Fruit Sorbet

In warmer months it can be tempting to reach for an ice-cream which can often have lots of hidden sugars. Opt for a healthy alternative by stocking your fridge with homemade fruit sorbets for a refreshing fruity snack without hidden sugar. Experiment with seasonal fruits and different flavours or try these three fruity flavours.

Raspberry Sorbet Ingredients:
  • 3 cup frozen raspberries
  • 1 cup ice
  • *Optional 2 tablespoons of honey
Method:
  1. Blend or process raspberries until smooth. Strain mixture through a fine sieve over a large bowl, using the back of a spoon to extract as much liquid as possible. Discard seeds. You will need 500ml (2 cups) liquid.
  2. Add ice and blend until smooth. Either serve straight away or put in a freezer-safe container
Lemon Sorbet Ingredients:
  • A thick strip of lemon peel
  • Juice of 2-3 lemons
  • 1 cup ice
  • *Optional 2 tablespoons of honey
Method:
  1. Mix lemon peel and juice with lots of ice and blend together until smooth.
  2. Either serve straight away or put in a freezer-safe container.
Passionfruit Sorbet Ingredients:
  • 3 cups passionfruit pulp
  • 1 cup ice
  • *Optional 2 tablespoons of honey
Method:
  1. Blend or process passionfruit pulp for 20 seconds or just until seeds separate from the juice. Strain through a fine sieve into a large bowl, pressing down on seeds with the back of a wooden spoon to extract as much liquid as possible. Discard seeds. You will need 500ml (2 cups) liquid.
  2. Add ice and blend until smooth. Either serve straight away or put in a freezer-safe container.
