Butter bean and greens salad


100g green beans, trimmed and chopped

2 x 400g cans butter beans, rinsed

100g sugar snap peas, halved

400g heirloom mixed tomatoes

1/2 small red onion, finely sliced

1 handful torn rocket

Basil leaves, for garnishing


1 tsp mustard

1 tsp honey

2-3 tbs red-wine vinegar

2 tbs olive oil

Salt and peper


  1. Blanch green beans for in a large pot of boiling water for 2 minutes.

  2. Add blanched beans with the other ingredients in a large bowl.

  3. wish together the dressing ingredients and drizzle over the salad.
